Vintage Pansexual Trash Shirt

Honestly, unless you are cash/space-constrained; no reason not to use both. We use 4 pans in rotation; cast iron, carbon steel, stainless steel (super useful for tomato/acid-related stuff), and a non-stick for omelettes. Additionally, we have a two small and one medium saucepan, a cheap Vintage Pansexual Trash Shirt stockpot, and a nice dutch oven. Dish Soap is fine on cast iron! The soap you can’t use is lye-based washing powders or soap that your great grandparents used. Modern detergent will not touch your seasoning. Agreed. Carbon steel pans are what professional kitchens mostly use and since buying one I will never go to nonstick pans again. My carbon steel is as great, if not better than my cast iron pans. That’s only a six-inch, plus that pitting is concerning. $30 isn’t a bad collector’s price, but it’s not in great shape and not going to be a good daily user. Modern cast iron is both rougher and heavier. You can eventually fill in the pebbled surface Vintage Pansexual Trash Shirt with seasoning, but it will never be as smooth as a pre-1950s Griswold. I got really lucky and found the early 1940s 12” for $8 and will never go back to Lodge!
